Meet Nicole

Nicole Edmonds brings over a decade of data privacy and commercial legal expertise to her work advising Scholz’s nonprofit clients. In addition to her role at Scholz, Nicole serves as Director of Operations for the Women’s Soccer and Lacrosse programs at the University of Oregon. Nicole began her legal career founding NPS Legal, Inc. in San Francisco, where she served as outside counsel to a diverse portfolio of clients across real estate development, SaaS, telecommunications, and data protection. She went on to join Nexmo Inc. as Privacy and Commercial Counsel, playing a central role in the company’s successful acquisition by Vonage Holdings Corp. in 2016. She then served as Vonage’s Senior Privacy Counsel and Global Data Protection Officer, leading data protection compliance across 35 entities in 18 countries and spearheading the organization’s GDPR compliance program. After Vonage, Nicole built privacy programs from the ground up at two additional technology companies, Oyster HR, a global employment platform, and Covetrus, Inc., a veterinary technology company with $5 billion in annual revenue, where she served as Global Privacy Counsel and co-chaired the Generative AI Governance Committee. Nicole holds CIPP/E and CIPP/US certifications from the International Association of Privacy Professionals and is a licensed California attorney. She is based in Eugene, Oregon.

Nicole grew up in the United States and holds dual US-EU (Republic of Ireland) citizenship, giving her a uniquely international perspective on data privacy regulation. A lifelong athlete, Nicole played soccer collegiately, semi-professionally, as well as internationally for the Republic of Ireland. She received her J.D. from the University of San Francisco School of Law, her Master of Public Administration from Cornell University, and her B.A. in Political Science from the University of Washington. Outside of work, Nicole enjoys spending time with her husband Rob and their mini bull terrier Yahtzee and remains an avid follower of women’s collegiate and professional sports.

Experience includes:

  • Advising organizations on data privacy compliance, including obligations under the California Consumer Privacy Act (CCPA), state comprehensive privacy laws, and sector-specific federal privacy frameworks
  • Drafting and negotiating data processing agreements, vendor contracts, and privacy-related commercial contract templates
  • Conducting privacy impact assessments and data protection impact assessments for new and existing programs and services
  • Building and operationalizing privacy programs, policies, and governance frameworks across complex, multi-jurisdictional organizations
  • Advising on data breach response, incident management, and regulatory notification obligations
  • Providing practical guidance on data ethics, AI governance, and emerging technology compliance issues
  • Liaising with regulators and outside counsel on litigation, regulatory inquiries, and data protection matters
  • Drafting and negotiating a high volume of commercial agreements across a wide range of transaction types, including master services agreements, software licensing agreements, distribution and reseller agreements, consulting agreements, and employment agreements
  • Advising clients on contract strategy, negotiation thresholds, and risk allocation in fast-paced technology environments
